Romaine Taco Wraps with Ground Beef: It’s easy to sub whatever meat you prefer, but I used grass-fed ground beef. Sautee the beef in a skillet with some taco seasoning (paprika, chili powder, garlic powder, cumin, salt, pepper, chipotle, etc.) and a diced onion. Drain fat. Layer into romaine leaves and top with pickled jalepeno, a little cheese, sour cream, avocado, a little lime juice and cilantro–anything you like, really. Instead of chips and salsa on the side, I like to eat a few “veggie chips,” so I cut up peppers and cucumbers and dip them into a sour cream-salsa mixture.
